Here’s a technique that makes cooking bacon easy:
Cooking Bacon is best done in a convection oven! This technique frees up your time and attention to prepare the rest of the meal.
Lay individual slices of bacon on a broiler pan, close, but not touching.
Put broiler pan on the rack in the centerof COLD oven.
Set oven at CONVECTION BAKE at 350 degrees (NOT Broil).
When your oven alerts you that it has reached temperature, your bacon is done!
That’s it! No turning, no spattering, no mess! Of course if you like your bacon more or less crisp just adjust the temperature up or down accordingly. The temperature also depends on how much fat is in your bacon, so different brands require different temperatures. Hint: Make sure you are in the kitchen so you hear the oven “buzz” when it has reached temperature.
I use this technique all the time for breakfast, BLT’s and bacon bits. I turn the temp to 365 for bacon bits for the Cheesy Fries Recipe below:
Cheesy Fries Like the Outback Steakhouse
Ingredients:
6-8 strips of bacon, cooked as above and crumbled
1 lb bag of frozen fries
1 cup shredded Jack cheese
Dipping Sauce Ingredients:
1/2 cup sour cream
Tablespoon horseradish (or to taste)
dash each cayenne pepper, black pepper, and salt
Blend all ingredients of Dipping Sauce well. Cover and refrigerate to let flavors blend. Cook Fries according to package directions of your preferred method, oven bake or pan fry. If pan fried in small batches, keep them warm in a 250 degree oven. When all the fries are done, mound onto a serving plate, or divide onto 4-6 individual plates. Salt if desired and cover with shredded cheese and bacon crumbles. Place back in oven until cheese is melted. Remove carefully as plate will be hot. Serve immediately with dipping sauce. Serves 6.

Techniques are the most difficult to guess and sometimes the most important when trying to clone a Famous Restaurant Secret Recipe. For example, if you want to make your favorite famous restaurant chicken recipe, you may not be able to just saute a whole boneless chicken breast. Chicken breast is all white meat which can dry out quickly, especially the thinner end. Sometimes the trick is to make the breast thinner, a more even thickness. There are two ways I do this:
Cut the breast in half horizontally:
When the chicken breast is almost completely thawed or completely thawed, press it flat on a cutting board with the palm of your hand, chicken breast smooth side up. Place the breast lengthwise under your hand with the thickest side under your thumb area, your fingers together and pointing away from you.
Using the whole blade of your knife, start at the thumb side and carefully slice the breast in half horizontally, keeping the knife flat, “feeling” the knife stay level and even. Do this slowly so that you can adjust your angle if necessary. Usually a wide, long knife works better. If your knife has a nice handle, you can place the handle flat on the cutting board and use for a “cutting guide.”
You will have 2 pieces of breast meat. The bottom will be slightly larger because it will have most of the thinner end in tact.
There you have it, thinner chicken breasts that will cook faster and therefore be more moist.
Pound out the chicken breast:
Place the fully thawed chicken breast in a large plastic baggie. Make sure the chicken is laying flat on one side of the bag, smooth side up and centered in the bag. Leave the bag open.
Place bag with meat on cutting board or other stable surface.
Using a meat mallet, carefully pound the breast to flatten and thin to desired thickness.
Be careful to pound the thinner parts of the meat less, and the thicker parts more, for even thickness.
If you don’t have a meat mallet, you can use the broad side of a cleaver, a rolling pin, or a wine bottle. Be careful when using a round object as uneven thickness can result.
Hint: Remember that thinner chicken breasts will take less time to cook through.
Use this prep technique for chicken breasts when cooking your favorite restaurant secret recipes and you will be very pleased with the result. Yours may even be better than the original!

Secret Cajun Dry Rub Recipe
It was 1993, and I was cooking an outdoor dinner function for a large corporation. The theme was to be Cajun. At the time I did not know to much about Cajun or creole cuisine, so I decided to ask around. I came upon a chef from New Orleans who had been known for his famous Cajun Dry Rub. This recipe was so popular that he kept the original recipe in a safe deposit box at his local bank.
After talking with him for several hours, he realized that I was a trained chef and was willing to help me in any way possible. Thats when he agreed to let me in on some of his secrets. The next couple of weeks I tried all of his recipes and they were fantastic, but the one I wanted was the Cajun rub. I called him after the big function to ask if he would share it with me. He told me that he would send me a sample of the rub, and if I could guess all of the ingredients in the rub, then I could have the recipe and share it with anyone. I said you got a deal.
He sent the rub and I began to taste and re-taste for several weeks. Finally, I called him and told him I think I know the recipe. He quietly listened and said I was close but was missing one ingredient. I felt like I had failed and was ready to hang up. It was at that moment when he said wait….you were so close that I have decided to give you the Cajun Rub recipe anyway. I was elated and hung up the phone. I have now decided to share this incredible recipe with all of you.
CAJUN RUB
Use as a coating for pork chops, ribs, beef or chicken
2 T. paprika
2 tsp. salt
2 tsp. onion powder
2 tsp. garlic powder
2 tsp. Cayenne
2 teaspoons brown sugar
1 1/2 tsp. ground white pepper
1/2 tsp. ground black pepper
1 tsp. dry thyme leaves
1 tsp. oregano leaves
1 tsp. Old bay seasoning
In jar with tightfitting lid, shake together all ingredients. Store tightly covered at
room temperature. Makes about 1/2 cup.

12 ounces bittersweet or semisweet chocolate, coarsely chopped
8 large egg yolks, plus 7 large eggs
1 1/2 cups confectioners’ sugar
1/4 cup all-purpose flour
18 fresh raspberries
6 scoops vanilla ice cream
Cooking Preparation
1. Preheat the oven to 350F. Generously butter six 6-ounce souffl
cups and sprinkle each with granulated sugar. Tap out the excess
sugar.
2. In the top of a double boiler set over barely simmering water,
melt the butter and chocolate together. Remove the top of the
double boiler pan from the heat.
3. In the bowl of an electric mixer fitted with the whisk
attachment and set on low speed, beat the egg yolks and eggs for
about 2 minutes, or until light and smooth. With the mixer running,
pour the melted chocolate into the bowl and mix for about 2 minutes
longer.
4. Put the confectioners’ sugar and flour in a fine-mesh sieve and
sprinkle into the chocolate mixture. With the mixer on medium
speed, beat for 30 seconds, or until well mixed.
5. Pour the batter into the prepared souffl cups, leaving about
inches of space below the rim. Set the souffl cups on a baking
sheet and bake for 18 to 20 minutes, or until puffed and about 1
inch higher than the rim. The centers will be soft but not sticky.
6. Remove the cakes from the oven and immediately invert each onto
a serving plate. Remove the cup, and garnish each plate with three
raspberries and a scoop of vanilla ice cream.
